This is exactly how I love to make the TASTIEST beef wellington at home, from scratch. The real question is… DOES GORDON APPROVE?! Hope you all enjoy the video! Full ingredients list below…
The Thermometer I Use:
Serves 4-6
Beef:
– 800-850g centre cut fillet of beef
– Sea salt
– 1 tsp high heat vegetable oil
– 1 tbsp dijon mustard
Mushroom Duxelles:
– 2 tbsp olive oil
– 600g chestnut mushrooms
– 400g mixed wild mushrooms
– 240g shittake mushrooms
– 1 clove garlic
– 2 tbsp finely chopped thyme
– Salt and pepper
– 75ml (a glug) of whiskey
Crepes:
Makes 6-7
– 30g parsley
– 100g spinach
– 10g chives
– 300ml milk
– 2 whole eggs
– 35g melted butter
– 150g flour
Other:
– 8-10 slices of prosciutto
– Egg wash – 2 egg yolks beaten with 1 tbsp milk
– Thyme leaves to garnish
Sauce:
– 3 halves of bone marrow
– 3 shallots
– 600ml wine
– 400ml beef stock
– Sprig of rosemary
