My Custard powder has it all – it is a convenient, dry mixture primarily made of cornflour (cornstarch), flavoured with vanilla, sweetened with powdered sugar and coloured with a yellow tint to give it the traditional custard look. When mixed with milk and gently heated, it thickens into a creamy, sweet sauce similar to conventional custard made with eggs. This is perfect for its ease of use, as it eliminates the need for eggs while delivering a smooth, velvety texture.

Custard powder is versatile and can be used in various desserts, such as pouring over puddings, filling tarts, or even as a base for other sweet creations. It provides a mild vanilla flavour, and the texture can be adjusted depending on how much powder and liquid you use, making it suitable for anything from thin sauces to thick, pudding-like desserts. – 300g Cornflour (cornstarch)
– 100g Milk powder (full cream or skimmed)
– 100g Powdered/Icing sugar (optional, for sweetness)
– 2 tablespoons Vanilla powder or 1-2 teaspoons vanilla essence (for flavour)
– 1/4 teaspoon Yellow food colouring (optional, for colour)

To cook – 2-3 tablespoons 500ml milk whisk, heat up
It can be cooked in the microwave for 1 – 2 mins

NOTE: VANILLA powder is NOT vanilla pod powder, which is brown.

– 120g Corn starch/flour
– 20g salt
– 10g sugar
– 2 tsp pink curing salt (Prague Powder #1)
– 1 tsp white pepper
– 1 tsp garlic powder
– 1 tsp onion powder
– 80 ml ice water
– 1.5g sodium erythorbate (approximately 0.075% of the meat weight) -Optional – it is a cure accelerator
Milk powder as a binder 10g per kilo – about 1 % weight for the binder – (optional)
