Want to make it spicy add chile Γ‘rbol, New Mexico chile pods are nice in spice so It’s not needed, don’t want it spicy at all? No problem, use chile guajillo

5qt water
Salt I used 3 tbsp
1lb pork ribs or neck bones
4 lbs pork shoulder
1/2 onion
4 bay leaves
75-110 oz precooked hominy
Fir ny red sauce
15 New Mexico or guajillo chile pods
2 chile anchos
1/4 onion
4 garlic cloves
1 tbsp chicken bouillon
1 tbsp oregano
1 tsp cumin seeds
