RECIPE:
Ingredients
For the chicken
1500g chicken thighs ( about 3 medium)
* Handful of onion
* Half thumb size ginger
* 2 gloves garlic (smashed)
* 1 teaspoon thyme (or a few sprigs of fresh thyme)
* 1 teaspoon curry powder
* 2 teaspoons salt
* 4 single crushed chicken bouillon cubes (2 ) teaspoon
1/2 cup water

For the tomato sauce:
* 9 medium tomatoes (600g)
* 3 large bell peppers (550g)
* 1-2 scotch bonnet pepper
* 1/2 small red onion
* 1 bulb of garlic
* Few sprigs of fresh thyme

For the rice:
* 6 cups rice (1200g)
* 1/2 cup oil
* Handful of chopped onion
* 12 oz tomato paste 327g
* 1 1/2 cups blended tomato sauce (410g)
* 2 1/2 teaspoons salt
* 1 teaspoons crushed knorr chicken cube
* 1 tablespoon dried thyme
2 bay leaves
* 1 tablespoon curry powder
* 2 cups chicken stock.
* 2 cups water.
