My Custard powder has it all – it is a convenient, dry mixture primarily made of cornflour (cornstarch), flavoured with vanilla, sweetened with powdered sugar and coloured with a yellow tint to give it the traditional custard look. When mixed with milk and gently heated, it thickens into a creamy, sweet sauce similar to conventional custard made with eggs. Ingredients:
– 300g Cornflour (cornstarch)
– 100g Milk powder (full cream or skimmed)
– 100g Powdered/Icing sugar (optional, for sweetness)
– 2 tablespoons Vanilla powder or 1-2 teaspoons vanilla essence (for flavour)
– 1/4 teaspoon Yellow food colouring (optional, for colour)

To cook – 2-3 tablespoons 500ml milk whisk, heat up
It can be cooked in the microwave for 1 – 2 mins

NOTE: VANILLA powder is NOT vanilla pod powder, which is brown.

I am so, so pleased that these things exist. They are just the BEST! If you’ve never tried one then you need to make these. A little bit fiddly but heaps easier than you might think. And, you don’t need to go all the way to Lisbon to get one now (although that would still rule!)

Recipe –
For the pastry…
290g plain flour
1/4 tsp salt
210ml water
240g very soft unsalted butter
extra flour for dusting

For the custard…
40g plain flour
50ml milk
165ml water
240g caster sugar
1 cinnamon stick
another 250ml milk
