β’ 2 tsp lemon juice/vinegar (for curdling milk)
β’ 4 cups water (for sugar syrup)
β’ 1 cup sugar
β’ Β½ liter full-fat milk (for rabri)
β’ ΒΌ cup sugar (for rabri)
β’ Β½ tsp cardamom powder
β’ Saffron strands
β’ Chopped nuts (almonds, pistachios)

1οΈβ£ Make Paneer: Boil 1 liter of milk, add lemon juice to curdle it, and strain to get fresh paneer. Knead until smooth, then shape into small, flat discs.
2οΈβ£ Prepare Sugar Syrup: Boil 4 cups water with 1 cup sugar. Add paneer discs and cook for 10-15 minutes until they puff up. Let them cool.
3οΈβ£ Prepare Rabri: Simmer Β½ liter milk until thickened. Add ΒΌ cup sugar, cardamom powder, saffron, and nuts. Let it cool slightly.
4οΈβ£ Assemble: Gently squeeze the syrup from paneer discs and soak them in the prepared rabri. Chill before serving for the best flavor.
