Chicken Fried Rice Recipe
Ingredients:
• 6 boneless chicken thighs
• 1 tsp Creole seasoning
• 1 tsp paprika
• 1 tsp parsley
• 1 tsp ground black pepper
• 1/2 tsp lemon pepper
• 5 eggs (salt and pepper to taste)
• 5 tbsp oil (divided)
• 6–8 cups cooked rice (preferably chilled)
• 1 tbsp sesame oil
• 1 1/2 cups mixed veggies (e.g., peas, carrots, corn)
• 3 cloves garlic, minced
• 1 tbsp minced ginger
• 5 tbsp soy sauce
• 5 tbsp hoisin sauce
• 1/2 cup green onions, chopped
Instructions:
1. Prepare the Chicken:
• Cut the chicken thighs into small bite-sized pieces.
• Season the chicken with Creole seasoning, paprika, parsley, ground black pepper, and lemon pepper. Mix well to coat evenly.
2. Cook the Chicken:
• Heat 2 tablespoons of oil in a large skillet or wok over medium-high heat.
• Add the seasoned chicken and cook for 6–8 minutes, or until fully cooked and golden brown. Remove from the pan and set aside.
3. Scramble the Eggs:
• In the same pan, add 1 tablespoon of oil. Crack the eggs into the pan, season with a pinch of salt and pepper, and scramble until fully cooked. Remove the eggs and set aside.
4. Sauté the Aromatics:
• Add the remaining oil to the pan. Sauté the minced garlic and ginger for 1–2 minutes, or until fragrant.
5. Cook the Vegetables:
• Add the mixed veggies to the pan and stir-fry for 3–4 minutes, until tender.
6. Add the Rice:
• Increase the heat to high and add the cooked rice. Stir-fry for 2–3 minutes, breaking up any clumps with a spatula.
7. Season the Fried Rice:
• Drizzle the sesame oil, soy sauce, and hoisin sauce over the rice. Mix well to ensure the rice is evenly coated.
8. Combine Everything:
• Add the cooked chicken, scrambled eggs, and chopped green onions to the pan. Toss everything together and stir-fry for another 2–3 minutes.
9. Finish and Serve:
• Taste and adjust seasoning if needed.
• Garnish with additional green onions or sesame seeds, if desired. Serve hot and enjoy!
This recipe makes a flavorful and satisfying meal, perfect for a weeknight dinner or leftovers the next day.
